February 2026 Baking Schedule
To weigh up the cold of January, February’s loaves feature hearth porridge breads, our hoping-for-warmer-season Olive and Golden Raisin breads, bracketed by our springy Pain de Campagne and chewy Lucca’s White Not, with our favorite Pumpernickel Rye in the middle. January 2026 Baking Schedule
Happy New Year! The Spring 2025 cycle of Ferment’s Bread CSA will begin next Monday, January 12, and run for five months (Jan 12-Feb 6; Feb 9-Mar 6; Mar 9-Apr 3; Apr 6-May 1; May 4-29). Thanks to a generous subscriber, this month’s breads will all be using locally sourced organic stone-milled flours from Ground Up and Maine Grains! We’re excited to try and taste them out. November Baking Schedule
The first November baking schedule not to reach Thanksgiving weekend – it falls into the December cycle this year – brings back some older recipes: the Wheat-Rye Caraway Coriander and Chia Seed loaves, the double fermented Cracked Rye and our homage to the Parisian baker Poilâne’s three-grain boule, and the liquid-lévain based Pain au Levain. Our spelt-based Dinkel Ruchbrot (a Swiss favorite) and Épautre Complet (a new all-spelt recipe!) round out this month’s offerings. Enjo
